ALTER TABLE page MODIFY COLUMN page_title <column type> COLLATE latin1_general_ci
Seems like I need the COLLATE command somewhere in there.
Found solution: ALTER TABLE page MODIFY COLUMN page_title varchar(25) COLLATE latin1_general_ci
